This recipe was discovered on one late morning (or afternoon) when we were too lazy to get bread from a 4-min-away supermarket. Quick search on ‘easy quick bread’ made us land on this recipe online. All you need is flour, margarine, salt and baking powder (we skipped plant-milk and used water). Plus, it saves packaging and you get to skip the preservatives.
So if you are like us and would rather bake then go to the supermarket this is a perfect recipe! It is quicker than going to a shop, since it only takes 2+10min in total to get fresh baked scones.
Scones, Makes 12-16 scones
300 g flour (white or whole wheat)
2 tsp baking powder
½ tsp salt
60 g plant-based margarine, melted (or liquid ones)
200 g water
Preheat the oven to 210 °C (upper and lower heat.)
Melt the margarine.
Mix all the ingredients in a bowl. Roughly mix them (like cutting into the dough), making sure not to over mix! It will get gummy when over mixed.
Form dough into two balls, flatten it on floured surface, and cut each like pizza in 6-8 pieces. It can also be made as drop biscuits if formed into rough balls and flattened.
Place scones onto a baking sheet lined with parchment paper and bake for about 10 minutes until golden.
*Recipe can be easily halved or be doubled.
This one was with whole wheat flour. Still airy and fluffy!
